When you first taste this wine, it's acidity and sharpness gets to you, but after waiting a while (like a day in my case), it seems that breathing time allows for the wine's flavor to settle somewhat and mellow into a playfully palatable drink.

I think that it's probably paired best with citrus flavored meals.
