Dry smoke, mixed with a little woody-ness and very mild tannins, I am tasting dark plums and a little black currant and dark cherries. It stayed in contact with the skins for 18 to 20 days, which is an extended period [but one that Eric says is going to be part of his normal style of wine production]. The wine has a finish that easily lasts for thirty seconds, and the taste is never too strong. This would be perfect for roasted meats and some grilled ones as well.
