Lately, I have been in a Sauvignon Blanc phase. Well, actually, it is now one of my favorite white wines to drink, while the rest are all white wine blends made of anywhere from two to nine different varietals.

Anyway, with this wine, you get a nice kick of tart citrus as the wine alights on your tongue. Eating something like dark cherries before that gives it the sensation that it's coming a second or two after. At this point, the citrus turns into a very manageable lemon taste, and you feel as though the wine has another flavor in it, like that of apricot mixed in with pear or peach.
